- Posizionare l´affilacoltelli su una superficie di lavoro piana. Tenere l´affilacoltelli con una mano, come indicato, e il manico del coltello con l´altra. Inserire la lama del coltello completamente nella fessura dell´affilacoltelli a un angolo di 90 gradi. Applicare una pressione moderata verso il basso sulla lama, facendo passare il coltello attraverso la fessura corretta. Ripetere l´operazione facendo passare la lama sempre dal manico alla punta (mai indietro e avanti) attraverso una delle fessure in ceramica.
- Nota: La prima fase in carburo (grezzo) affila i tagli smussati. La seconda fase in ceramica (fine) fornisce un taglio affilato come un rasoio e lucido.
- Un coltello abbastanza affilato richiede solo una leggera levigatura.
- Cura e uso: Pulire sempre l´affilacoltelli dopo l´uso. Pulire con un panno umido oppure con una spazzola delicata, quindi asciugare con un panno.
- Non sciacquare con acqua.
- Carburo/grosso
- Regola rapidamente il taglio.

- Dà la finitura al taglio.
