CARATTERISTICHE TECNICHE
- Composizione : potassio metabisolfito.
- Caratteristiche : additivo enologico antimicrobico, solubilizzante dei polifenoli, antiossidante.
- Applicazioni : elemento fondamentale nelle stabilizzazioni enologiche. Si impiega anche nell'industria conserviera, alimentare in genere, frutta, crostacei, birra, marmellate, aceto.
- Dosaggi nel vino : limiti di SO2 secondo regolamento CEE 822/87 art. 65: 160 mg/L per i vini rossi.
- 210 mg/L per i vini rosati e bianchi.
- Nei vini con residui zuccherini pari o superiore a 5 g/L di zucchero invertito i limiti salgono a :
- 210 mg/L per i vini rossi.
- 260 mg/L per i vini rosati e bianchi.
- Utilizzazione : disperdere nella massa, il prodotto è agevolmente solubile.
- Si consideri che 1 gr di potassio metabisolfito sviluppa circa 0,5 g di SO2.
- Conservazione : in luogo fresco e ventilato. È un prodotto igroscopico, pertanto in presenza di umidità tende ad assorbire acqua e può impaccarsi.
- Caratteristiche chimiche e fisiche :
- titolo : Più di 97,2 %
- metalli pesanti : meno di 10 mg/kg Pb.
- Prodotto conforme a : DM 26/04/69 sostanze uso enologico; DIR 96/77 CE additivi
